Evaluation of selected cider apple (<i>Malus domestica</i>Borkh.) cultivars grown in Ontario. II. Juice attributes

Twenty-eight apple cultivars were selected for their potential hard cider production in Ontario; juice characteristics measured 2017 and 2018, beginning two years after planting 2015. After being harvested pressed, each sample underwent analyses to determine soluble solids concentration (SSC), titratable acidity (TA), pH, yeast assimilable nitrogen (YAN), polyphenolic concentration. Soluble ranged from 10.6 °Brix Brown’s Apple 18.3 Ashmead’s Kernel. Titratable 31 as mg malic acid per 100 mL Sweet Alford 191 Bramley’s Seedling. The pH 2.88 Breakwell 4.76 Alford. Yeast 60 YAN·L −1 Medaille d’Or 256 Bulmer’s Norman. Polyphenols 131 μg gallic equivalents (gae)·mL Tolman 1042 gae·mL Stoke Red. Firmness 6.3 kg Yarlington Mill 11.7 GoldRush. relationships between these variables also analyzed, showing a connection juicing efficiency well relationship polyphenol fruit weight. Exploratory indicated that attributes can be used distinguish origins. Cider producers use data what expect cultivars.
