Evaluation of Physicochemical and Amphiphilic Properties of New Xanthan Gum Hydrophobically Functionalized Derivatives

This research aimed to develop new hydrophobic and potentially amphiphilic benzyl xanthan gum (BXG) derivatives using a Williamson synthesis. modification consists of an etherification reaction between (XG) chloride (BC) under microwave heating. The effects the molar ratio (R = XG/CLB, with R equal 2 or 4) on character degree substitution (DS) were studied. two (BXG1 BXG2) subsequently subjected various physicochemical rheological characterization techniques. obtained results FTIR H1-NMR spectroscopy showed effectiveness grafting aromatic moieties onto XG molecule DS values 0.59 for BXG1 0.7 BXG2. XRD analysis revealed slight modifications in crystallinity after etherification, where (DOC) 8.46%, 10.18%, 14.67% XG, BXG1, BXG2, respectively. Additionally, conductivity measurements that BXG exhibit higher than native due inter- intra-molecular associations following groups. Moreover, critical aggregation concentration (CAC) was detected at 0.32% 0.28% study confirmed its exhibited shear-thinning pseudoplastic behavior viscosity increases when increases. emulsifying power test BXGs compared properties benzylated derivatives, stabilizing capacity increased DS.
