Most living things need oxygen to survive. However, the consumption of by cells causes formation reactive species (ROS). In this case, can have a toxic and mutating effect. It is reported that ROS, which create an imbalance between antioxidant system organism cause oxidative stress, chronic acute diseases such as cardiovascular diseases, cancer, diabetes, Alzheimer's some immune problems aging. Antioxidants are substances delay or prevent damage caused in environments, although they exist low concentrations. Epidemiological studies report antioxidant-rich diet beneficial great impact on disease prevention. For reason, lot research should be done natural antioxidants. purpose, Diospyros kaki (persimmon), Prunus lauroceraus (cherry laurel), Vaccinium arctostaphylos (blue berry) fruits dried at 60°C then mixed with ethanol (40°C), hot water (75°C) warm (40°C). were subjected extraction process extracts obtained rates 2.5% 5%. The DPPH method was used determine According results obtained, highest activity determined extract blue berry fruit, lowest cherry laurel fruit. observed increasing concentration slightly increased activity.
