Enzymatic synthesis of fructo-oligosaccharides using Pectinex® Ultra SP-L: A study of experimental conditions

The obvious benefits of employing prebiotics as functional components in many foods and feed products have resulted higher demand for their industrial production, necessitating the development more efficient cost-effective manufacturing procedures. As a result, goal this study was to synthesize confirmed prebiotics, namely fructo-oligosaccharides (FOS), using sucrose substrate, since it allows synthesis oligosaccharides with lower polymerization degree, consequently, pronounced prebiotic effect. Due its availability, low market price, high stability under conditions, commercial enzymatic mixture, Pectinex® Ultra SP-L, is used source enzyme - fructosyltransferase (FTase). By varying key experimental conditions such pH, temperature, substrate concentrations, well duration process, composition FOS mixture can be adjusted fit potential applications. It found that by performing reaction an aqueous medium (pH 7), at temperature 50 °C concentration 1% (v/v) any range 200-700 g/L, possible achieve maximum yield 60% total carbohydrates within 24 h. produced syrup content further adequate food additive, or else, developed processes should transformation various (such juices, jams, fillings, candies, cakes, etc.) which dominates, creating caloric value.
