Effect of ingredient composition on characteristics of artificial rice made from banana flour

Abstract Artificial rice is a grain that similar with made from flour the main content of carbohydrates. In production artificial rice, composition ingredients will determine characteristics product. This study aimed to effect raw material on banana flour. was arranged in completely randomized design treatments including use 100% flour; + emulsifier and 90% 10% emulsifier. Parameters observed were colour, expansion ratio, sensory characteristics. Then, best product analysed its nutritional content.
