Edible insects – a new trend in Functional Food Science

Population growth, rising global food demand, and environmental concerns related to (animal) production have indicated the use of edible insects as a sustainable healthy source. However, despite being considered novel in Western countries, entomophagy is traditional habit many human cultures ethnic groups. Many preclinical studies highlighted health benefits their bioactive compounds, although evidence humans still limited.
