Dynamics of Nutrients in Jujube (Ziziphus jujuba Mill.) at Different Maturity Stages, Cultivars, and Locations in the Southwest United States

Jujube ( Ziziphus jujuba Mill.) is also called Chinese date. There are ∼100 jujube cultivars with limited commercial availability, and the majority of them have scant details in United States. In this study, nutrient dynamics during fruit maturation different grown at Las Cruces, Los Lunas, Alcalde, NM, were examined 2018 2019. Cultivars varied by location year, included ‘Li’, ‘Lang’, ‘Sugarcane’, ‘September Late’, ‘Sherwood’. Parameters tested total phenolic content (TPC), proanthocyanidins (PAs), vitamin C, cyclic adenosine monophosphate (cAMP), antioxidant capacity: 2,2-diphenylpicrylhydrazyl radical scavenging capacity ferric reducing potential (FRAP). Moisture, TPC, PAs, FRAP, C decreased maturity; however, latter stage maturity showed an increase cAMP. Compared full-red maturity, creamy had PA, concentrations that 1.0 to 1.8, 4.4 12.4, 1.9 2.6, 0.1 1.3 times higher, respectively, depending on P < 0.05). From cAMP increased 0.9 4.5 times. At estimated TPC ranged from 10.6 16.8 mg gallic acid equivalent per gram dry weight (DW), whereas PAs 1.8 5.3 PA B 2 /g DW. a 649.0 1153.3 mg/100 g concentration 148.1 277.6 μg/g DW Cruces samples.
