Fluid/fluid interfaces are ubiquitous in science and technology, hence, the understanding of their properties presents a paramount importance for developing broad range soft interface dominated materials, but also elucidation different problems with biological medical relevance. However, highly dynamic character fluid/fluid makes shedding light on fundamental features guiding performance very complicated. Therefore, study cannot be limited to an equilibrium perspective, as there exists undeniable necessity face deformation flow these systems under application mechanical stresses, i.e., interfacial rheology. This is multidisciplinary challenge that has been evolving fast recent years, currently available experimental theoretical methodologies providing accurate information response mainly dilational shear. review focused updated perspective stresses; open up new avenues enable exploitation rheology shed interest technology.
