Digestibility and Nutritive Value of High Crude Protein Sake Cake

چکیده

酵素により米のデンプンを分解し液化処理する清酒製造法が普及し,食用に適さない粗蛋白質含量の高い酒粕(高CP酒粕)が産出されている。しかし,高CP酒粕は,日本標準飼料成分表(2009年版)に示されている酒粕(酒粕(乾),CP36.9%DM)とは栄養成分値が大きく異なり,豚における消化率及び栄養価は不明である。そこで,高CP酒粕について,消化率及び栄養価を明らかにするために消化試験を実施した。最初に,供試品選択のために,18点の家畜飼料向け酒粕の栄養成分値及びアミノ酸含量を分析した。その結果,家畜飼料向け酒粕の凍結乾燥品のCP含量は13.9~69.2%DM(平均36.1%DM)と変動が大きかったが,アミノ酸含量(%CP)は比較的一定であった。事前調査において最も高いCPの酒粕を生産していた酒蔵由来の高CP酒粕の乾燥品(CP73.5%DM)を供試品として選定した。LWD三元交雑種の肥育豚(去勢雄9頭,雌9頭,平均体重45.6 kg)を供試し,3飼料区に体重及び性を考慮して割り付け,試験豚房で単飼した。試験飼料はトウモロコシ,大豆粕を主体とする基礎飼料,基礎飼料の一部を供試品で置換した飼料を給与する酒粕5%飼料及び酒粕10%飼料とした。酸化チタンを消化率算出のための指標物質として用いた。前半4日間を予備期間,後半3日間を糞採取期間とした。各試験飼料の消化率を算出し,間接法及び外挿法により供試品の消化率を算出した。高CP酒粕のCP消化率は外挿法により76.0%と算出され,酒粕(乾)と同等であった。高CP酒粕の可消化エネルギー(DE)は,高CP酒粕の総エネルギー(GE)と外挿法によるGE消化率から17.11 MJ/kgDMと算出され,酒粕(乾)よりも高かった。
