Devising optimal technological parameters for spray drying to produce whole camel milk powder

Camel milk is a valuable source of protein and nutrients, it has therapeutic prophylactic properties. The production dry dairy products based on camel implies prolonging its shelf life, decrease in the cost transportation storage. To manufacture milk, necessary to optimize technological parameters drying, which affect physical-chemical Whole from camels (Camelus dromedarius) was dried spray drying plant under following modes: inlet temperature 140 °C 160 °C; feed rate 30 ml/min 40 ml/min. dependence such physical properties powder as water solubility index, absorption moisture content, hygroscopicity, density, activity, stickiness size particles been established. study results show that highest index samples equal 81.25±0.11 %, corresponded air at 150 At same time, lowest 62.89±0.27 % modes ml/min, respectively. With an increase supply raw materials, there content activity.
