Determination of fatty acid composition and antioxidant activity in vegetable oils

Studies of the composition vegetable oils are expedient in order to achieve quality product modelling. The goal this research was determine fatty acids using gas chromatography (GC) and antioxidant activity DPPH ABTS spectrophotometric methods. Analysed were castor seed, sunflower sesame fibrous hemp black radish seed olive oils. Different classes determined: polyunsaturated, monounsaturated saturated; omega-3, omega-6 omega-9 individual constituents. study results showed that dominant all oleic linoleic acids. best ratio omega-3 found oil – 3:1. All analysed demonstrated a high activity.
