Fructooligosaccharides (FOS) are fructose oligomers that beneficial to human health and nutrition for being prebiotic sugars. Their production occurs by a transfructosylation reaction in sucrose molecules catalyzed fructosyltransferase enzymes (FTase, E.C.2.4.1.9) adhered microbial cells. The purpose of this work was study the preparation, enzymatic activity, stability glutaraldehyde-crosslinked Aspergillus oryzae IPT-301 cells used as biocatalyst packed bed reactor (PBR), aiming at FOS production. highest activity (AT) presented prepared crosslinking 200 rpm 45 min.
