Cottonseed and Soy-bean agro-industrial by-products used in feedlot cattle diet: effects on beef fatty acid profile and quality parameters

ABSTRACT Beef composition are directly influenced by the dietary fat, particularly in ruminants, due to rumen biohydrogenation, which promotes alterations fatty acid (FA) profile and affects meat quality. sensorial, chemical, FA compositions of intramuscular subcutaneous fat were evaluated, from 40 Nellore males finished on feedlot diet based, containing cottonseed (CSB) soybean by-product (SOB) as agro-industrial sources. CSB a source, did not alter beef pH, shear force, chemical composition, or compared with SOB diet. Differences observed at yellow red color, low high inclusion; contrary, inclusion led an intensely unpleasant aroma aged cooked meats. Regarding profile, 3% produced steaks lower proportion C 17:0 , having 1.359 3.238 g/100 g FA, whereas 5% increase 18:2 n -6 0.298 0.132 animals fed SOB, respectively. more intense aroma, higher linoleic content; however, color cattle less like those SOB; these could therefore be recommended for use by-products
