Comprehensive Mass Spectrometric Analysis of Snake Fruit: Salak (Salacca zalacca)

Snake fruit (Salacca zalacca (Gaert.) Voss) is a species traditionally cultivated in Indonesia and other Southeast Asian countries. The edible parts of the fruits contain certain amount total phenolic, flavonoid, monoterpenoid compounds, proving them to be their perfect sources. main goal this work was detect, quantify, identify various phenolic compounds present snake pulp. Ultrahigh performance liquid chromatography coupled Q-Orbitrap tandem mass spectrometer able detect 19 salak pulp, including 5 flavanols, 6 acids, 2 flavonols, 1 flavone, also presumably new compounds. Among detected 11 were reported quantified for first time Chlorogenic acid by far most predominant compound. next relatively abundant epicatechin, isoquercetin, neochlorogenic acid, ferulic gallic procyanidine B2 (levels at ca 5–10 μg/g MeOH extract), syringic caffeic H2O extract). A significant content (257.17 μL/mL) antioxidant activities (10.56 μM TE/g pulp) determined. In conclusion, S. has potential serve as natural source with antioxidative which may associated health benefits.
