Comparison of the Grain Quality and Starch Physicochemical Properties between Japonica Rice Cultivars with Different Contents of Amylose, as Affected by Nitrogen Fertilization

چکیده

In order to determine the effects of nitrogen fertilizer on grain quality and starch physicochemical properties japonica rice cultivars with different contents amylose, normal amylose content (NAC) low (LAC) were grown in a field, or without (WN). The relationships between content, eating also examined. Compared WN, (NF) significantly increased yield but markedly decreased weight. addition, processing tended improve, appearance deteriorated under NF application. was similar NAC LAC cultivars. However, palatability cooked higher than cultivar, which due its lower protein hardness, retrogradation enthalpy degree, stickiness, peak viscosity, breakdown, relative crystallinity intensity. negatively correlated palatability. positively final viscosity setback, crystallinity, intensity, gelatinization breakdown. Palatability breakdown degree. Therefore, selection cultivar can reduce contents, as well improving pasting properties, rice.
