Comparative Studies on the Physicochemical Characteristics and Lipid Contents of Desert Date (Balanites aegyptiaca (L.) Del) Kernel and Pulp Oils

Aims: This work is aimed at investigating physicochemical parameters and compositions of fatty acid, phospholipid sterol desert date (Balanites aegyptiaca) kernel pulp.
 Study Design: Balanites aegyptiaca fruit one the oldest feed-stocks in Africa which little or no attention has been given to it. The plant plays a diverse cultural traditional role different societies. Therefore, it very important explore more about chemical composition pulp oils aegyptiaca; since currently attracting considerable research interest as result its beneficial properties.
 Methodology: parameters, acids, phospholipids phytosterols B. seed have analyzed compared with standards that conventional oil for easy assessment their suitability nutritional industrial applications.
 Results: results some were acid value (26.35 15.60 mg KOH/g), peroxide (3.82 5.90 meq/kg), saponification (162.40 198.60 iodine (55.20 142.50 I/100 g), specific gravity (0.93 0.92), kinematic viscosity (2.12 1.65 St) refractive index (1.41 1.39), respectively. most concentrated acids palmitic (14.53%) < linoleic (35.65%) oleic (38.27%) while linolenic (8.21%) (16.80%) (32.70%) (33.56%). Arachidic, behenic, lignoceric myristic all present small quantities none them recording up 1.0% either samples. Caprylic, capric lauric determined but not detected both oils. contained healthy mixture types saturated unsaturated acids. polyunsaturated/saturated (P/S) associated impact on human health was higher (2.47). Phosphatidylcholine had highest content 75.99 25.88 mg/100 g, total values 85.00 9.87 respectively.
 Conclusion: aegytiaca potential substitute several materials used manufacturing pharmaceutical industries. However, order extend usage, these should be refined improve colour taste.
