he chocolate industry is constantly developing new products with different fillings, toppings, flavours, etc. Chocolates alcoholic filling are popular, especially young adults. In chocolates kinds of thickeners can be used to increase the viscosity and make production easier. this study, we examined cocoa shells, a by-product industry, as ingredient thickener an filling. bitter herbal liqueur were produced in ball mill four fillers. A comparison guar gum shell was conducted. The influence ingredients on stability filled determined by measuring colour gloss over 30 days accelerated fat bloom. results showed that for which more stable than where used. Evaluation sensory properties conducted trained panel. highest-rated, after assessment, dark contained shells Also, online questionnaire examine consumer preference product. According results, it concluded would desirable.
