Co-encapsulation of vitamin D and rutin in chitosan-zein microparticles

Abstract There is a growing interest in co-encapsulating multiple species to harness potential synergy between them, enhance their stability and efficacy various products. The aim of this work was co-encapsulate vitamin D 3 rutin inside chitosan-zein microparticles using simple easily scalable process for food fortification. This achieved via anti-solvent precipitation coupled with spray-drying. Free-flowing powders spherical wrinkled surface particle size < 10 ?m were obtained. encapsulation efficiency 75% 44% could be attributed different molecular affinity the aqueous phase. physicochemical properties characterized by X-Ray powder diffraction Fourier transform infrared spectroscopy. two crystalline bioactive compounds present amorphous form, which would allow better bioavailability when compared non-encapsulated solid. Therefore, obtained suitable use as ingredient fortification, co-encapsulated acting activity enhancer.
