Chemical characterization of carob seeds (Ceratonia siliqua L.) and use of different extraction techniques to promote its bioactivity

چکیده

Nowadays, the use of carob (Ceratonia siliqua L.) is reduced to its seeds. In fact, food additive E410, locust bean gum, obtained from endosperm. However, available information regarding bioactive potential seeds limited and, often, with poorly established terminologies, not allowing reader know if studied samples included seedless or seeded samples. So, present study intended carry out a chemical characterization focused on their compounds and test properties. Carob proved be source tocopherols organic acids, including phenolic compounds. Its antioxidant was demonstrated in vitro, as well antimicrobial capacity. This work proves that have other functions addition those associated E410. Thus, another can given seed, namely function preservative.
