Characterization of soluble and insoluble fibers in artichoke by-products by ATR-FTIR spectroscopy coupled with chemometrics

The objective of this study was to characterize the insoluble and soluble dietary fiber present in Argentine Italian artichoke (Cynara scolymus) by-products by comparing chemical analysis ATR-FTIR spectroscopy. Non-edible bracts (AR) (Benevento (BN) Sicily (SC)) cultivars were employed. fibers extracted physical procedures determined chemical, attenuated total reflection Fourier transform infrared (ATR-FTIR) spectroscopy, chemometric (principal components analysis, PCA). No differences content between AR SC samples observed, although they both showed higher values than BN. With respect fiber, fraction represents 82.5%, 63.5%, 55.2% for BN, AR, respectively. Fibers from presented different compositions structures, as ATR-FTIR, compared those (BN SC). Comparing results measured ezymogravimetric assay with obtained PCA, we conclude that it is possible discriminate contain kinds using ATR-FTIR.
