Characterization of Bacterial Exopolysaccharides Produced from Different Fruit-Based Solid Media

Bacterial exopolysaccharides (EPSs) share their compositional and structural features with plant dietary fibers. Therefore, analysis of bacterial EPSs produced during fermentation fruit or vegetables interferes that To get rid this effect, bacteria were grown on a solid medium containing juice purée recovered in quantitative dependent manner quantified the phenol-sulfuric acid colorimetric method. The protocol was assayed both MRS fruit-based media, three strains from two species, Leuconostoc pseudomesenteroides 56 Weissella cibaria 21 64. With method, differences EPS production levels shown according to strain cultivation conditions, such as sucrose content pH. Complementary NMR indicated glucose partly EPSs, pointing out requirement for further purification step. It also showed EPSs’ ramified structure differed used medium. This method recovery is helpful select pilot lactic vegetable foods.
