Indonesia is highly diverse in culture, ethnicity, religion, and natural resources. The diversity also obvious its cuisine. Soto an example of iconic Indonesian dish found many parts the country. Despite sharing a similar name, recipes vary according to their place origin. Until now, how variants are not exactly known. This review aimed discuss characteristics based on ingredients. soup composed spices-flavored broth various solid ingredients, such as vegetables protein-and carbohydrate-rich foods. Every region has different recipe Soto; some use non-turmeric or coconut milk soup. carbohydrate ingredients mainly soun (cellophane noodle) potato. protein chicken, egg, beef. Vegetables consist bean sprouts, tomatoes, cabbage. Fried garlic, shallot, spring onion, crackers added garnish. ingredient makes distinction among Soto: locality Approximately 46 types reviewed this article. Most soun, boiled white pepper, red ginger, bay leaf main becomes identity geographical origins recipes.
