Changes in the technological properties of sugar beet root crops during industrial storage in ventilated piles

When storing sugar beets in natural conditions, transformations of the chemical composition occur it, leading to accumulation non-sugars, which reduces processing efficiency and yield. The use technology forced ventilation air environment kagats is aimed at reducing negative impact ongoing processes. This study presents results changes technological properties during industrial storage two types: a ventilated rack, rack without ventilation. It was shown that stagger led slower development diseases root crops with stag rot, processes proceeded 2 times slower. Changes after 45 60 days are shown. were stored for days, daily decrease content 1.6 lower than when staggered ventilation; increase substances 3.5 lower, α-amino nitrogen, potassium, sodium - on average 1.2 lower. calculated yield conditions trough 1.1 higher has been established creation more favorable beet pile through intensity biochemical microbiological crops, extends shelf life their properties, ensures economic production.
