Carob Antioxidants in Human Health: From Traditional Uses to Modern Pharmacology

Carob has been used by humans since antiquity. Its major use is food, but traditional medicines of many nations it for treatments various health disorders. The fruits (pods or kibbles) were the main source nutrition and medicinal uses, decoctions extracts prepared from other parts tree, especially leaves. Modern science analyzed most chemical compositions different parts, among phytochemicals that found, antioxidants play very important roles in nutritional activities. So, addition to having strong antioxidant activity due it, these natural products, their extracts, foods contain them, have anticancer, neuroprotective, hepatoprotective, antiaging, skin care, antidiabetic, others. Phenolics carbohydrates are strongest antioxidants, some volatile compounds same activity, extent. However, this review will present activities, suggest future horizons human wellbeing.
