Bromatological characterization of fruit waste

چکیده

In Colombia, a high amount of fruit waste is currently generated. These causes negative environmental impact due to its organic load. However, this type has compounds in structure that can be used order reduce the and obtain added value. The main study was characterize bromatologically sixteen residues processing propose possible use food industry. bromatological characterization carried out by means quantification dry matter (ASTM E1756-08), ash E1755-01), proteins (Kjeldahl method), crude fats (AOAC Official Method), total dietary fiber 993.21) carbohydrates. It found grape soursop seeds, lulo peel tree tomato stem presents highest with content percentages above 50 %. Also, tomato, soursop, tangerine orange seeds are an important source protein fats, values than 12 27 %, respectively. also pineapple, mango, have carbohydrate greater 50%. As conclusion, results demonstrate potential industry, their protein, fat, carbohydrates content.
