Nowadays, consumers are more aware about what they eat and how it is packaged. Food quality of paramount importance eager to be constantly updated the perishability shelf-life food products buy. This gave rise intelligent packaging (IP) materials devices that can communicate with all people throughout entire route. One main colour-based IP systems based on use anthocyanin (ATH)-based natural dyes by exploiting their pH-dependent colour changes easily readable naked eye. review focuses recent studies regarding ATH-based sensor development for applications, offering valuable insights factors affect efficacy developed IP, such as material where ATH anchored, type concentration, ingredients used in formulation storage conditions product. Additionally, last also summed discussed detail identify major bottlenecks need overcome accelerating commercial application sensors IP. Although indicators able correctly indicate several at a laboratory scale, industrial production still impaired methods this sensors.
