Edible insects are high value alternative protein sources, exhibiting quality nutrient compositions along with potentially health-promoting constituents. Insects rich in (35–61%), lipids (13–33%) and also contain a significant amount of ‘animal’ fiber form insoluble chitin. Apart from macronutrients, some known for their minerals vitamins profiles. However, the vary species, diet, developmental stage, sex growth environment insects. Bioavailability bioaccessibility insect nutrients sparsely researched topics, while most studies focus on content characterization. Similar to any other food, type preparation processing has effect bioaccessible nutrients. This article provides an overview bioavailability present factors affecting variability.
