Bioactive compounds in gladiolus flowers

Abstract Flowers have received special attention not only for their ornamental nature but also nutraceutical, cosmetic, aromatic, and culinary properties. This study aimed to characterize physicochemical attributes the antioxidant capacity of flowers four gladiolus cultivars. The cultivars used were White Friendship, Rose Supreme, Jester, T704. We analyzed content total soluble solids (SS), titratable acidity (TA), SS/TA ratio, pH, vitamin C, anthocyanin, flavonoids, phenolic compounds (TPC), activity (TAA), relationship TPC with flavonoids TAA each cultivar. results showed that Jester had lowest TA highest indicating best flavor. flavonoid content, similarly Friendship Supreme.
