چکیده
Nopalea cochenillifera (L.) Salm-Dyck is a scarcely studied cactus; its characterization contributes to identifying the bioactive compounds it contains and functional properties, which will allow generating information on potential uses applications. The aim of this work was characterize N. cladodes flour physicochemically identify phenolic that contains. In general, low in calories (337%) with high total dietary fiber content (18.41%). addition, exhibits good water (11.04%) oil (2.05%) absorption capacity, while swelling capacity 25 mL/g DW. soluble hydrolyzable polyphenols were 207.92 647.99 mg EAG/100 g DW, respectively. they showed antioxidant activity by DPPH• (15.28 mmol TE/g DW), FRAP (20.97 ABTS•+ (51.31 DW) methods. Furthermore, six acids (gallic, ferulic, chlorogenic, p-coumaric, syringic, neochlorogenic) identified HPLC. According results, an important source interesting properties. context, could be used as ingredient formulation foods. However, further, studies are needed shelf life optimizing preservation process, transformation, potential.

متن کاملItalian Opuntia ficus-indica Cladodes as Rich Source of Bioactive Compounds with Health-Promoting Properties
Natural by-products, especially phenolic compounds, are in great demand by the nutra-pharmaceutical and biomedical industries. An analytical study was performed to investigate, for the first time, the presence of antioxidant constituents and the corresponding in vitro antioxidant activity in the extract of cladodes from Ficodindia di San Cono (Opuntia ficus-indica) protected designation of orig...
متن کاملIdentification and characterization of a novel arabinoxylanase from wheat flour.
An endogenous wheat (Triticum aestivum) flour endoxylanase was purified to homogeneity from a crude wheat flour extract by ammonium sulfate precipitation and cation-exchange chromatography. The 30-kD protein had an isoelectric point of 9.3 or higher. A sequence of 19 amino acids at the NH2 terminus showed 84.2% identity with an internal sequence of 15-kD grain-softness protein, friabilin. High-...
متن کاملCholine Acetyltransferase from the electric organ of Electrophorus electricus (L.)--physicochemical characterization and immunochemical identification.
It is well known that the regulation of choline acetyltransferase (ChAT) activity, under physiological conditions, is important for the development and neuronal activities of cholinergic systems. The purification of ChAT has been obtained from many sources such as electric organs of fishes, Drosophila melonogaster, and mammals. We have prepared choline acetyltransferase from a pool of supernata...
متن کاملMicrobiological and physicochemical properties of sourdough bread from sorghum flour
Sorghum is the world’s fifth most important cereal grain after wheat, maize, rice and barley. Sourdoughs have been successfully used to improve the quality of gluten-free bread. The production of a novel food product with improved health benefit for gluten intolerance individuals necessitated this study. Microbiological and physicochemical qualities of the bread samples were determined. Sorghum...
