Autochthonous and international grape varieties grown in Serbia - Phenolic and elemental composition

The phenolic and elemental profiles of Serbian autochthonous grape varieties ‘Smederevka’ ‘Plovdina’ were studied compared with some international varieties. Total content radical scavenging activity highest in seeds ‘Plovdina’, skins, which also had the contents ferulic, chlorogenic caffeic acids (16.0, 1.44 0.98 mg/kg, respectively). Protocatechuic acid was quantified only these Untypically for Vitis vinifera L. species, presence malvidin 3,5-O-dihexoside found skins ‘Vranac’ ‘Muscat Hamburg’. In among anthocyanins, hexosides peonidin delphinidin prevalent. grapes lower quantities Al, Ni Na comparison to other intended white wine production. Significant correlations most abundant elements, such as K, P, Ca, Mg, S, Fe, Cu, Zn, pointed potential positive interactions. For elements that have toxicological reference values, health risk assessment calculated adults children, suggested all samples safe human consumption.
