Antioxidant Properties, ?-Aminobutyric Acid (GABA) Content, and Physicochemical Characteristics of Tomato Cultivars

Tomatoes are rich in secondary metabolites such as lycopene, ?-carotene, phenolics, flavonoids, and vitamin C, which responsible for their antioxidant activates. A high level of ?-Aminobutyric acid (GABA), a health-promoting functional compound, was also found to accumulate tomato fruit. In addition the internal quality attributes, acceptance fruit by consumers is highly dependent on appearance taste. Hence, we conducted this study evaluate ‘Tori’, ‘TY VIP’, ‘Mamirio’, ‘Arya’ cultivars based physicochemical characteristics, contents metabolites, GABA content. The results have revealed that tested were very firm, renders them best choice postharvest distribution fresh market tomatoes they resist impacts during harvesting operations. Based total soluble solids (TSS), titratable acidity (TA), Brix ratio (BAR) cultivar could be ‘Mamirio’ > ’Tori’ VIP’ ‘Arya’. Apart from flavor intensity, highest content ascorbic while had carotenoids (lycopene ?-carotene) accumulation. On other hand, phenolics recorded Moreover, flavonoids VIP’. Nevertheless, activity lowest all ‘Mamirio’. Taken together, findings present suggest consumers’ requirements better fulfilled choosing specific target compounds. From cultivars, if acid, carotenoids, then choice. One label an ‘antioxidant tomato’ ‘GABA tomato’.
