Antioxidant content and volatile composition of seedless table grape (Vitis vinifera L.) varieties

Abstract Grapes are important sources of phenolics, which recognized to possess high biological value. In this work, we evaluated the total phenol content (TPC), anthocyanin (TAC), antioxidant activity (AA) and volatile composition unstudied seedless table grape varieties (i.e., Autumn Crisp Pristine as white cultivars, Scarlotta Crimson red cultivars Adora Melody black cultivars). As a result, exhibited higher TPCs, TACs AA, measured by 2,2-diphenyl-2-picrylhydrazil (DPPH) photochemiluminescence (PCL) assays, than rest varieties. A comparison between two proved that possessed TPC (62.70 mg GAE 100 g −1 ), DPPH radical scavenging (IC 50 3.69 ml ) PCL antiradical (72.14 µg Trolox (47.30 , IC 5.0 42.36 respectively). The composition, determined solid phase microextraction (SPME)–gas chromatography/mass spectrometry (GC/MS), indicated similar qualitative aroma profile for all However, quantitative differences were among them, reflected in distinct sensory perception sensorial testing. From these results, was selected its properties flavor characteristics.
