The purpose of this study was to reveal the changes in total phenolic content and antioxidant capacity broccoli, an untargeted metabolomics approach developed investigate effect lactic acid bacteria fermentation on metabolome broccoli florets. results showed that significantly increased after fermentation. metabolite profile main chemical components fermented unfermented are lipids lipid-like molecules, organic acids derivatives organoheterocyclic compounds. Univariate multivariate statistical analyses identified metabolites some such as sorbitol upregulated fermentation, other l-malic downregulated Moreover, pathway were used identification subtle but significant among groups related cannot be observed with conventional approaches. KEGG analysis mainly enriched glucagon signaling pathway, pyruvate metabolism, glycolysis/gluconeogenesis fructose mannose metabolism compared raw broccoli. can help further our understanding impact LAB bioactivity application health foods special dietary foods.

Lactic acid bacteria and bifidobacteria were screened of their ability to ferment fructooligosaccharides (FOS) on MRS agar. Of 28 strains of lactic acid bacteria and bifidobacteria examined, 12 of 16 Lactobacillus strains and 7 of 8 Bifidobacterium strains fermented FOS.
