Antibacterial inhibitory test of tomi-tomi fruit (Flacourtia iinermis Roxb) extracts against pathogenic bacteria in improving food safety

Abstract The tomi-tomi fruit ( Flacourtia inermis Roxb) is a rare plant. This has benefits as flavourings spice and also traditional medicine used by the community, besides it contains tannins flavonoid compounds that can inhibit growth of pathogenic bacteria in food. To support use F. increase its application supporting food safety, purpose this study to test see antibacterial inhibitory power extract against bacteria, namely Gram-Negative Salmonella typhimurium ) Gram-Positive Staphylococcus aureus Bacillus cereus ). an experimental using Disc Diffusion method determine bacterial ethanol solvents with concentrations 25%, 50%, 75%. results showed three tested turned out concentration 75% had very strong category S. 39 mm, 32.7 mm B. 34.0 mm. Thus, be for decontamination 3 types especially which have power, maintain quality improve among others rice, milk, cheese, fish, meat often contaminated.
