The resistance of tuna meat in a room temperature classed quietly short as it takes approximately 6 hours has encountered process decay. Consequently, the technology is needed to increase its durability. This study aims analyze exposure Extremely Low Frequency (ELF) 700 μT and 1000 magnetic fields (Euthynnus Affinis C). sample was 3300 grams fresh meat, which had been stored refrigerator for 4 divided into 66 plastic wrappers (50grams), then grouped three groups. They were control group (K), ELF intensity (E700) group, (E1000) with variations an time 15 minutes, 30 45 minutes. Measurement pH assessment physical condition carried out on 5th, 10th, 15th after being exposed fields. results highlighted value all groups significantly lower (p < 0.05) than group.
