Analysis of beef meatballs with rat meat adulteration using Fourier Transform Infrared (FTIR) spectroscopy in combination with chemometrics

Indonesia is a country with majority Muslim population, and the halal food consumed should be assured. One type of that must considered from meat products. Due to price difference between non-halal meat, some unethical producers try adulterate beef rat meat. The research objective was employ FTIR spectroscopy in combination chemometrics for analysis adulteration meatballs. Lipid components meatballs containing beef, or its binary mixture were extracted using three extraction methods, namely Bligh Dyer, Folch, Soxhlet methods. lipid then analyzed spectra obtained used as variables during modeling. absorbance values by methods at selected wavenumbers regions 3100–800 cm?1 discrimination adulterated linear discriminant (LDA). LDA successfully classify accuracy levels 100%. prediction determined multivariate calibrations Partial Least Square (PLS) Principle Component Regression (PCR) optimized conditions. composition, indicated profiles samples, fingerprint technique authentication purposes.
