Analisis Sensori Buah Tomat (Lycopersicum esculentum Mill) yang Disimpan dalam Kemasan Plastik Perforasi

Abstrak. Buah tomat (Lycopersicum escuentum Mill) merupakan buah yang cepat mengalami kerusakan setelah dipanen sehingga diperlukan cara untuk mempertahankan kesegaran dari dan sayuran agar bertahan lebih lama bisa dikonsumsi dalam keadaan segar. Pengemasan plastik dengan perforasi metode paling murah memperpanjang masa simpan buah. Tujuan penelitian ini adalah melihat pengaruh variasi penyimpanan terhadap mutu sensori tomat. Rancangan digunakan Acak Lengkap (RAL) faktorial. Faktor diuji ada 2 yaitu terdiri 5 taraf hari ke (0), (4), (8), (12) (16) 3 tanpa (kontrol), 4 8 masing-masing dilakukan kali ulangan, didapatkan 45 satuan percobaan. Hasil analisis sidik ragam menunjukkan bahwa jumlah berpengaruh sangat nyata uji organoleptik, susut bobot, tekstur objektif, vitamin C. Perlakuan terbaik pada terdapat perlakuan 12 4, bobot senilai 7,47 %, objektif 1,31 kg/cm2 C sebesar 30,50 mg/100 gr.
