An Intelligent Food Salt Tester Using Cross-Conductive Sensor

Salt is a mineral used in various industries/foods to fulfil different needs. Its utilization for food preparation most common and its unmonitored consumption leads many diseases. In this article, two sensors S1 S2 have been designed simulated using COMSOL MULTIPHYSICS 5.6 software measure the salt concentration of samples. The performances sensor structure evaluated by varying geometrical parameters electrode materials. works on extension Thompson Lampard Theorem, well-known principle fabricate primary standard capacitor. Sensor fabricated, experiments are conducted with concentrations experimental results closely match simulation commercial conductivity meter. A highly linear response sensitivity 1.87 mV/(mg/100 ml) an average repeatability index ±0.17% observed. Furthermore, Gaussian Naïve Bayes-based machine learning algorithm has categorize samples into eight taste types. data generated 100 volunteers. achieved accuracy 93.33% predicting type.
