در این پژوهش اثر افزودن wpc به شیر و استفاده از آغازگر های تولید کننده eps جهت تخمیر بر خواص حسی، فیزیکی و پایداری دوغ بررسی شد. ابتدا اثر درصد wpc، تیمار حرارتی و کاهش ph بر دو فاز شدن دوغ مورد بررسی قرار گرفت. نتایج نشان دادند که تیمار حرارتی به مدت 30 دقیقه در دمای ?c85 و کاهش ph دوغ تا کمتر از 4، باعث کاهش دو فاز شدن گردید. سپس تاثیر جانشینی پودر شیر پس چرخ با wpc در چهار سطح (صفر، 75/0، 5/...
