The characterization of the microstructures of freeze-dried food products determines the speed of and the properties after rehydration. The pore size distribution is an important characteristic of such textures. Spatial homogeneity and the orientation of voids and cracks inside the samples are studied.

Phytochemical investigation of the fruits of Daucus carota L. resulted in the isolation of a new sesquiterpene named as daucucarotol (1). Its structure was elucidated on the basis of 1D and 2D NMR experiments, coupled with MS studies. To our knowledge, compound 1 is the first example for a natural eudesmane sesquiterpene with a hydroxymethyl group located at a methine carbon rather than a usual...
The activity of the first enzyme of the shikimate pathway, 3-deoxy-d-arabino-heptulosonate 7-phosphate synthase, is demonstrated in extracts of Daucus carota cells grown in suspension culture. Maximum specific enzyme activity is found midway through the logarithmic growth of the culture; cells in lag and stationary phases of growth have lower enzyme levels. The enzyme is activated by tyrosine a...
BACKGROUND Daucus carota L.ssp.carota (wild carrot), an herb used in folk medicine worldwide, was recently demonstrated to exhibit anticancer activity. In this study we examined the anticancer effect of Daucus carota oil extract (DCOE) fractions on the human breast adenocarcinoma cell lines MDA-MB-231 and MCF-7 and clarified the mechanism of action. METHODS AND RESULTS Using the WST assay, th...

The vitamin A values of plant foodstuffs, as found by biological tests with rats, are often lower than would have been expected from the results of chemical estimations of the carotene content. The causes of this discrepancy presumably lie mainly in a less complete absorption of carotene from vegetables than from the oily solution in which the international /3-carotene standard is administered,...
A modified assay for inhibition of ice recrystallization which allows unequivocal identification of activity in plant extracts is described. Using this assay a novel, cold-induced, 36 kDa antifreeze protein has been isolated from the tap root of cold-acclimated carrot (Daucus carota) plants. This protein inhibits the recrystallization of ice and exhibits thermal-hysteresis activity. The polypep...
The aim of this work was to compare the effects of freezing rate on electrical conductivity of potatoes, carrots and apples. Electrical conductivity tests were conducted on a custom ohmic cell while samples texture was measured by means of a universal testing machine. The raw un-pretreated samples were used as control. This study showed that freezing pre-treatments lead to differences in electr...
New agents that are effective against common pathogens are needed particularly for those resistant to conventional antimicrobial agents. Essential oils (EOs) are known for their antimicrobial activity. Using the broth microdilution method, we showed that (1) two unique blends of Cinnamomum zeylanicum, Daucus carota, Eucalyptus globulus and Rosmarinus officinalis EOs (AB1 and AB2; cinnamon EOs f...
