This review summarizes a large set of related experimental results about protein adsorption and drop coalescence in emulsions, stabilized by globular milk proteins, beta-lactoglobulin (BLG) or whey protein concentrate (WPC). First, we consider the effect of drop coalescence on the mean drop size, d32, during emulsification. Two regimes of emulsification, surfactant-rich (negligible drop coalesc...

Nanotechnology, shortened to nanotech, is the study of the controlling of matter on an atomic and molecular scale. Generally, nanotechnology deals with structures sized between 1 to 100 nanometer in at least one dimension and involves developing materials or devices within that size. The use of nanotechnology in the field of pharmaceutics and drug delivery has grown over the last few years, so ...

Here we developed a simple and novel one-step approach to produce G/O/W emulsions with high gas volume fractions in a capillary microfluidic device. The thickness of the oil layer can be controlled easily by tuning the flow rates. We successfully used the G/O/W emulsions to prepared hollow microspheres with thin polymer shells.

Apolipoprotein E (apoE) is an important determinant for the uptake of triglyceride-rich emulsions and lipoproteins by the liver, and exerts affinity for both the LDL receptor (LDLr) and a distinct liver-specific recognition site. Our current aim was to assess the mechanism underlying the receptor-specificity of apoE-carrying lipoproteins. Triglyceride-rich emulsions were synthesized, with mean ...

Macroporous solid foams with magnetic properties may have interesting applications as adsorbents for purification and decontamination processes. High pore volume can ensure a high degree of absorption, and magnetic properties can facilitate removal from environment. Organic macroporous polymeric foams, with high pore volume and high degree of interconnectivity, can be obtained by polymerizing i...

We report the preparation of highly transparent oil-in-water Pickering emulsions using contrast-matched organic nanoparticles. This is achieved via addition of judicious amounts of either sucrose or glycerol to an aqueous dispersion of poly(glycerol monomethacrylate)56-poly(2,2,2-trifluoroethyl methacrylate)500 [PGMA-PTFEMA] diblock copolymer nanoparticles prior to high shear homogenization wit...

Flows of dense emulsions show many complex features among which long range nonlocal effects pose a problem for macroscopic characterization. In order to get around this problem, we study the flows of several dense emulsions, with droplet size ranging from 0.3to40microm , in a wide-gap Couette geometry. We couple macroscopic rheometric experiments and local velocity measurements through magnetic...

INTRODUCTION Previous studies and a meta-analysis in surgical patients indicate that supplementing parenteral nutrition regimens with n-3 polyunsaturated fatty acids (PUFAs), in particular eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA), is associated with improved laboratory and clinical outcomes in the setting of hyper-inflammatory conditions. Refined or synthetic fish oils are com...
