Ellagitannins are the main extractible oak wood phenolic compounds. These compounds responsible for high durability and they can contribute to wine spirits organoleptic quality (colour, astringency bitterness). Despite their importance, presence forms in distilled not well known. Thus, aim of this study was develop validate a measurement methodology quantify Cognac ellagitannins.
