Enteropathogenic Escherichia coli is a foodborne pathogen that produces potentially fatal infant diarrhea, noticeably in developing countries. The aim of this study was to detect EPEC contamination by PCR at different stages of the chicken slaughtering process. We collected swabs from chicken cloacae and washed carcasses (external and visceral cavity) during the slaughtering process in 3 sampli...
The effect of evaporative air chilling on quality of fresh chicken carcasses was compared with air chilling as reference method. Cooling efficiency and total heat loss were significantly higher for evaporative air chilling. The chilling method was of great importance for weight loss. Chicken chilled in cold air lost considerably more weight than chicken cooled by evaporative air chilling; the d...
Consumers believe that quality of foods from organic production is superior to foods from conventional production. The objectives of the present study have therefore been to compare the quality of chicken meat from organic and conventional production on the basis of traditional meat quality criteria. The experiment was organized as a field study. Fresh organic broiler carcasses were purchased d...

In this study, carcass, intestine, liver, gall bladder and spleen samples of chickens slaughtered at an abattoir in the Elazig province were tested for the presence of Salmonella spp. The identity of Salmonella spp. was further proved by culture and by polymerase chain reaction (PCR). A total of 1250 samples were tested. All samples were collected from different commercially reared chicken floc...
During 2016 in Guangzhou, China, we detected infectious avian influenza viruses (AIVs) in 39.8% of samples from chicken carcasses slaughtered at live poultry markets but none from carcasses supplied to supermarkets by facilities bypassing live poultry markets. Promoting supply chains with high biosecurity may reduce the risk for zoonotic AIV transmission.
This study was conducted to determine the prevalence of Salmonellae contamination of chicken carcasses in slaughterhouses in central Iran (Yazd province). 435 samples were obtained from liver, breast— before and after chilling—and bacteriological and serological examinations were done. The results showed that the rate of contamination of liver, breast meat—before and after chiller—were 8.1, 18....
Aim: To study the prevalence of pathogenic coagulase positive, methicillin-resistant Staphylococcus aureus (MRSA) in poultry meat and its products. Materials and Methods: A total of 125 poultry samples were collected during 2012 in Qena governorate for presence of pathogenic coagulase positive, methicillin-resistant staphylococcus aureus (MRSA). Samples were taken from freshly slaughtered whole...
