Sequence Analysis of Leuconostoc mesenteroides Bacteriophage 1-A4 Isolated from an Industrial Vegetable Fermentation Z. Lu,* E. Altermann, F. Breidt, and S. Kozyavkin Kennesaw State University, Kennesaw, Georgia 30144; AgResearch Limited, Grasslands Research Centre, Palmerston North, New Zealand; Department of Food, Bioprocessing and Nutrition Sciences, North Carolina State University, Raleigh,...
In conjunction with investigations on the a-l, 6-glucosidic linkage in starch, it was desirable to conduct comparative studies on other substances containing this linkage. The dextran from Leuconostoc mesenteroides, a polysaccharide having predominantly a-1 ,6-glucosidic linkages, was selected to be used directly in these comparative studies and to provide a source of simpler substances contain...
By site-specific mutagenesis, the hydrophobic conserved amino acids and the C-terminal GG doublet of the leader peptide of pre-mesentericin Y105 were demonstrated to be critical for optimal secretion of mesentericin Y105, as well as for the maturation of the pre-bacteriocin by the protease portion of the ABC transporter MesD.
Here, the genome sequences of Lactococcus lactis subsp. lactis bv. diacetylactis FM03 and Leuconostoc mesenteroides FM06, both isolated from cheese, are presented. FM03 and FM06 contain 7 and 3 plasmids, respectively, that carry genes encoding functions important for growth and survival in dairy fermentations.
Two phages, P793 and ΦLN04, sharing 80.1% nucleotide sequence identity but having different strains of Leuconostoc pseudomesenteroides as hosts, were selected for identification of the host determinant gene. Construction of chimeric phages leading to the expected switch in host range identified the host determinant genes as ORF21P793/ORF23ΦLN04. The genes are located in the tail structural modu...
The genus Leuconostoc belongs to a group of lactic acid bacteria usually isolated from fermented vegetables, which includes species involved in the production of exopolysaccharides (EPS). These biopolymers possess considerable commercial potential. Because of the wide variety of industrial applications of EPS, this study aimed to produce and characterize the native exopolysaccharide strain Leuc...
A sucrose phosphorylase (SPase) gene derived from Leuconostoc mesenteroides was introduced into a cellulose-producing Acetobacter strain and expressed under the lac promoter. The activity of the SPase was detected in extracts of the transformed cells and cellulose production from sucrose by the cells was found to have increased, which strongly suggests that the increase was the result of the ne...
This review covers the production, properties and applications of the biopolysaccharide dextran; this biopolymer can be produced via fermentation either with Leuconostoc mesenteroides strains and other lactic acid bacteria or with certain Gluconobacter oxydans strains. The former strains convert sucrose into dextran with the dextransucrase enzyme whereas the latter convert maltodextrins into de...
