Water mobility and distribution were measured in M. longissimus dorsi from 41 pigs slaughtered at an age of 90, 140, 161 or 182 days using low-field proton NMR relaxometry, and in order to investigate the impact on sensory attributes, a sensory evaluation of the pork was performed in parallel. The sensory evaluation demonstrated a significant effect of slaughter age on juiciness of the meat, an...
Animals of both sexes are slaughtered for meat and meat products at the abattoirs. It has been found in few countries that one-out-of-every-three ewe and one-out-of-every-four doe with single, twin or multiple foetuses are slaughtered in registered slaughterhouses. In quest for meat, numerous viable embryos and foetuses are wasted unnoticed since the productive pregnant animals are not spared i...
BACKGROUND In Ireland, every animal is examined at slaughter for its fitness for human consumption. The aim of this study was to determine the relative effectiveness of factories in submitting and subsequently in having suspect lesions confirmed as bovine tuberculosis (TB) lesions during the years 2005-2007. This work provides an update from previously published data for years 2003-2004. During...
Between 2005 and 2008 cysticercosis caused by Cysticercus bovis was detected in 1485 (0.44%) animals out of 335 436 heads of cattle slaughtered in the Lublin province. This particular cysticercosis was observed each year. In the period 2005-2008 cysticercosis caused by Cysticercus cellulosae was found only in a few pigs (93 cases--0.0059% out of 1 577 370 examined pigs).
Prevalence of cysticercosis among cattle and pigs slaughtered in the Lublin province in the years 2009-2012 was evaluated. The study draws its data from annual reports of the Veterinary Inspectorate in Lublin. Cysticercus bovis was detected in 1038 animals (0.19%) out of 542,963 heads of cattle in the Lublin province, whereas Cysticercus cellulosae was found in 150 (0.0044%) out of 3,367,444 ex...
A case of rumen acidosis in non-lactating cattle is reported. This was due to the fact that stale bread was fed ad lib, rather than concentrates. Of seventy animals, fourteen died or were slaughtered. The meat was declared unfit for human consumption in every case.
Two mycobacterium strains isolated from lung tissue a apical lymph nodes of slaughtered water buffaloes were biochemically analyzed and identified as Mycobacterium avium complex strains. Association between these microorganisms and the acquired immunodeficiency syndrome, and the potential risk posed by eating infected animals and their products, was discussed.
1. Several cases of bracken poisoning in farm animals have been reported. The Committee was asked to consider the hazards to the health of consumers eating foods derived from bracken-poisoned animals, and whether there were sufficient data to establish how long poisoned animals should be left before they may safely be milked or slaughtered for human consumption. It was noted that bracken is eat...
We set a method targeting 16 rRNA gene consisting in a single polymerase chain reaction of 40 cycles which is specific for pathogenic leptospira. Negative polymerase chain reaction results were observed with nonpathogenic Leptospira (serovar patoc) and other bacteria species. By this method a survey on a population of autochthon swine herds had been conducted in Sicily particularly on kidney sa...
