Assessment of Ethyl Carbamate Contamination in Cachaça (Brazilian Sugar Cane Spirit)
نویسنده
چکیده
Cachaça is a sugar cane spirit produced in Brazil. Ethyl carbamate (EC), a potential carcinogenic compound, may be present in cachaça above the limit established by law. The purpose of this study was to determine the concentration of ethyl carbamate in cachaças recently produced in Brazil in order to verify their compliance with the law. The concentration of ethyl carbamate was determined in 376 samples of cachaça through gas chromatography coupled to a mass spectrometer (GC-MS). The mean value of ethyl carbamate in the cachaças analyzed was 145 μg/L, and 24% of them were not in compliancy with the law (EC < 210 μg/L). However, compared to previous studies, advances have been observed regarding the adjustment of cachaças to the legal limit. Cachaças produced in large distilleries through continuous column distillation presented a mean value of 200 μg/L of ethyl carbamate. Cachaças produced in small distilleries using pot still distillation presented a mean content of 74 μg/L. Small producers have been more engaged in using good manufacturing practices to guarantee the quality of cachaças.

Direct Zinc Determination in Brazilian Sugar Cane Spirit by Solid-Phase Extraction Using Moringa oleifera Husks in a Flow System with Detection by FAAS
This paper reports a method for the determination of zinc in Brazilian sugar cane spirit, (cachaça in Portuguese), using solid-phase extraction with a flow injection analysis system and detection by FAAS. The sorbent material used was activated carbon obtained from Moringa oleifera husks. Flow and chemical variables of the proposed system were optimized through multivariate designs. The factors...
متن کاملEthyl Carbamate in Alcoholic Beverages from Mexico (Tequila, Mezcal, Bacanora, Sotol) and Guatemala (Cuxa): Market Survey and Risk Assessment
Ethyl carbamate (EC) is a recognized genotoxic carcinogen, with widespread occurrence in fermented foods and beverages. No data on its occurrence in alcoholic beverages from Mexico or Central America is available. Samples of agave spirits including tequila, mezcal, bacanora and sotol (n=110), and of the sugarcane spirit cuxa (n=16) were purchased in Mexico and Guatemala, respectively, and analy...

متن کاملThe Brazilian technology of fuel ethanol fermentation – yeast inhibition factors and new perspectives to improve the technology
Brazil is the second largest producer of ethanol in the world and the first in the technology of ethanol from sugar cane. The Brazilian bioprocess of ethanol production is based on molasses or cane juice substrate. Currently, a fed-batch or continuous or mixed process is operated with a stable cell recycle and high yeast concentration. The ethanol efficiency is controlled by several industrial ...
متن کاملSurvival of Trypanosoma cruzi in sugar cane used to prepare juice.
Chagas disease can be transmitted to man by many different means, including contact with infected triatomine feces, blood transfusion, laboratory accidents, organ transplants, and congenital or oral routes. The latter mode has received considerable attention recently. In this assay, we evaluate the survival of Trypanosoma cruzi contaminating sugar cane used to prepare juice, as well as the viab...
