The galactomannans [ l ] are a group of watersoluble polysaccharides which are found in the endosperms of leguminous seeds. (Not all legume seeds are endospermic, but if an endosperm is present it will contain galactomannan). Structurally, legume-seed galactomannans comprise a linear ‘backbone’ of ( 1 + 4)-@-linked u-mannopyranosyl residues, which is laterally substituted by u-galactopyranosyl residues linked a, 1 -. 6 to backbone mannose:
