Objective: The study aimed to evaluate the physicochemical properties and nutrition of Moringa leaf extract. In addition, preliminary for preparation extract-loaded phytosomes a supplement. Methods: Extraction made using microwave-assisted extraction, followed by evaluation proximate analysis (water, total ash, acid-insoluble ash contents, residual n-hexane), phytochemical screening, such as crude protein, amino acids, minerals (iron, zinc, calcium). were prepared anti-solvent precipitation method assessed morphology, particle size, zeta potential, polydispersity index (PDI), entrapment efficiency (EE), Fourier-transform infrared spectra.
