Improved rice cooking approach to maximise arsenic removal while preserving nutrient elements

چکیده

Inorganic arsenic (iAs) is a group 1 carcinogen, and consumption of rice can be significant pathway iAs exposure in the food chain. Although there are regulations place to control for marketed some countries, additional measures explored remove from rice. Due surface-bound soluble nature iAs, previous studies have shown that it removed extent using different cooking methods. Towards this goal we modified tested absorption method combination with four home-friendly treatments (UA = unwashed absorbed, WA washed PSA pre-soaked PBA parboiled absorbed) both brown white (3 types each). The nutrient elements were measured ICP-MS speciation was carried out LC-ICP-MS. Overall, our results show optimum approach assessed, removing 54% 73% inorganic respectively, raising margin (MOE) by 3.7 2.2 times rice, thus allowing more safely infants, children adults. Other effective reducing concentration only. Here also report changes selected (P, K, Mg, Zn Mn) which relatively abundant In general, retained nutrients than No loss observed other similar or less comparison reported losses cooked excess water literature. We conclude promising technique further research needed including regional quality levels.

Rethinking Rice Preparation for Highly Efficient Removal of Inorganic Arsenic Using Percolating Cooking Water

A novel way of cooking rice to maximize the removal of the carcinogen inorganic arsenic (Asi) is presented here. In conventional rice cooking water and grain are in continuous contact, and it is known that the larger the water:rice cooking ratio, the more Asi removed by cooking, suggesting that the Asi in the grain is mobile in water. Experiments were designed where rice is cooked in a continua...

Influence of cooking method on arsenic retention in cooked rice related to dietary exposure.

Arsenic concentration in raw rice is not only the determinant in actual dietary exposure. Though there have been many reports on arsenic content in raw rice and different tissues of rice plant, little is known about arsenic content retained in cooked rice after being cooked following the traditional cooking methods employed by the people of arsenic epidemic areas. A field level experiment was c...

cooking elements affecting on heavy metal concentration in rice

in recent years, heavy metal contamination of rice in different parts of the world has raised concerns about its safety and provoked crisis in it's global production and trade. in iran, also some studies have reported on the heavy metal contamination of native products. however, the concentration of heavy metals in rice grain could be influenced through preparation and cooking. this study aimed...

Accumulation of Arsenic in Rice Plant from Arsenic Contaminated Irrigation Water and Effect on Nutrient Content

For Bangladesh, the requirement for food is very high due to its huge population. To achieve self-sufficiency in food grain production, the HYV rice varieties are widely produced in Bangladesh, particularly in the dry season, and this requires a large volume of groundwater irrigation. Groundwater of many areas of our country is severely contaminated with arsenic. So, there is a possibility of a...

Translocation of uranium from water to foodstuff while cooking.

The present work report the unusual uranium uptake by foodstuff, especially those rich in carbohydrates like rice when they are cooked in water, contaminated with uranium. The major staple diet in South Asia, rice, was chosen to study its interaction with UO2(2+), the active uranium species in water, using inductively coupled plasma mass spectrometry. Highest uptake limit was checked by cooking...
