Eating insects has been a widespread habit in many cultures for years. Edible represent an innovative food source with advantages that will help the problem of protein and energy shortages created by rapid growth world population. Using as can increase economy protect environment human survival. Their nutritional value is excellent, since according to studies have high content, concentrations various essential amino acids, well-balanced fatty acid profile, content monounsaturated, polyunsaturated acids minerals, trace elements, vitamins. However, there are several risks use edible insects, which need be researched more extensively. Main goals spread knowledge change process obtaining better safer ways. So insect industry develop on solid basis, through expansion composition already used future legalization new species well establishment additional legislative frameworks breeding, development, processing, storage, safety these foods.
